Steak Soup or Vegetable Soup

Steak Soup
3 C water; 2 small onions chopped; 3 stalks celery chopped
2 carrots chopped; 1 tsp.pepper;
1 - 10 ounce mix vegetables; 1 lb.beef cut in bite size pieces (I use steak, but have used roast pieces)
2 – 4 tab beef base.  Put all above in pot, cover and simmer about 2 hours.
Mix ½ C melted Butter with ½ C flour and add to soup.  Bring to boil again - thickens as it boils; may simmer until you are ready to eat.  It is a very thick stew-like soup, and you can adjust thickness as you like.

May leave out the beef and you have a hearty vegetable soup!

Was given this recipe by a restaurant when first married in 1974.  Whole family loves it!
